I made the best salmon I've made in years tonight and it was the simplest. Enjoy!

Honey-Tamari Baked Salmon
2 lb. salmon fillet, cut into 2 pieces
1/4 cup tamari (wheatfree soy sauce)
1/3 cup honey
2 tbsp olive oil
Spread olive oil in Pyrex baking dish. Brush 2 tsp of the honey on the skin side of the salmon and place fillets, skin side down, into the dish. Pour tamari evenly over salmon, then drizzle rest of honey over fish.
Bake at 350 degrees for 30 minutes. Serves 4
Serve with rice or pasta, or muffins. Serve with lemon slices if desired.

Thanks for the chicken idea Yasmine! I wonder how it would taste with roasted pineapple? Definately have to try that!
