Two low carb, GF recipes for you today:
Salad-in-a-Bowl (12 carbs)
This is one of my fave salads and it's also low carb. It has goat cheese in it so not dairy free, but gluten free, soy free, and egg free.
1 can tuna (in oil--don't drain, if you use tuna in water, drain and add 2 extra tbsp olive oil)
1/2 cup cubed turkey breast
1 cup diced tomatoes
1 diced cucumber
2 oz soft goat cheese
1/4 cup grated goat cheddar
1 tbsp olive oil
Mix all ingrediants in a big bowl. Serves 1 (2 if you add something else).
Goat Yogurt "Pudding" (8 grams carb)
This has the texture and lightness of pudding
1 cup plain goat yogurt
1 tbsp lemon juice (cold)
2 pkts stevia
1/4 cup cinnamon
Stir well and serve. Delicious, light and fluffy. Gluten free.
